My Healthy Weeknight Dinner

Grilled Chicken Tostadas  



Notes
These chicken tostadas feature boneless, skinless chicken breasts in a bold and flavorful way: marinated and served alongside grilled, tangy tomatillos. Instead of frying tortillas for the base, we charred them on the grill for a slightly crisp but smoky flavor.

Ingredients
1/4 cup fresh lime juice
2 garlic cloves, sliced
1 chipotle chile in adobo, coarsely chopped
Kosher salt
2 large boneless, skinless chicken breasts, cut into 1-inch pieces (1 pound)
Cooking spray
4 (8-inch) flour tortillas
1 pound tomatillos, removed from husk and rinsed
1 tablespoon olive oil
2 cups shredded romaine lettuce
2 ounces queso fresco, crumbled, about 1/3 cup
Chopped onion, cilantro sprigs, and lime wedges for serving
Combine the lime juice, garlic and chipotle chile in a medium nonreactive bowl; season with salt. Add the chicken, toss well to coat, and refrigerate 2 hours. Remove the chicken from the marinade; thread onto 4 (12-inch) skewers lightly misted with cooking spray.

Preheat the grill to medium. Mist the tortillas with cooking spray. Add the tortillas to the grill; cook, turning once, until lightly toasted, about 1 to 2 minutes per tortilla.

Meanwhile, add the chicken and the whole tomatillos to the grill; cook, turning often, until tomatillos are charred and chicken is cooked through, 4 to 6 minutes. Remove the skewers from the chicken.

Coarsely chop the tomatillos and toss with oil and salt to taste. Place toasted tortillas on plates; generously top with romaine, tomatillos, chicken, and queso fresco. Serve with onion, cilantro sprigs, and a lime wedge if desired.

A Little Baby Crazy

I've been a little baby crazy lately searching everywhere(wayfair, wal-mart, home goods, etc) for furniture to go in my baby's nursery so here are a few items that i loved:

I absolutely love this Sleigh Crib in white (as shown) its beautiful with ribbon accents

I loved this Changing Table with cabinets and it comes in a few colors i want it in white


 I also found this Armour  with cabinets & drawers and i want it in white (as shown)



I love this Cubby to put clothes and toys in with baskets in white (as shown)

I love this Glider with foot rest it comes in a variety of colors for the upholstry and wood i want the upholtry in pink (as shown) but i want the wood in white 


I love this marble top Bedside Table in white of course and I would put this next to the Glider with a lamp and baby monitor on top and magazines on the bottom

This Table Lamp is beautiful and I love the shade print and colors

Hand Made Silhouettes 

I've been seeing these hand made silhouettes all over my Pinterest and on Etsy and decided its easy enough to make them myself. So i wanted to make it a weekend project and try it out. Here's How I Did It:



1. Google any silhouette, I loved the Disney Princess theme so that's what I got:


2. Print on any colored paper, I chose pink:




3. Cut them out. 4. Place in a frame, i also put a chevron print behind it and little birds with it 


5. Voila!!!! GREAT Idea!!!! 6. Continue with as many as you like for your wall, you can use any theme you like for girls or boys (this works great in a baby's nursery or child's bedroom)
